As announced on Monday, the Pancheros Mexican Grill location at 965 S. Riverside Drive will be rebuilt and reopened by the end of this year.
The location will also celebrate its 25th anniversary next year; it originally opened in 2000. The brand as a whole was first opened in Iowa City in 1992.
The expanded Riverside location will feature upgraded digital service with the addition of a “second-make line,” simplifying online order pick-up to provide a more efficient customer experience, as stated in a press release.
With a 28.59% digital sales average across its restaurants, the release states, the brand has placed digital ordering as a top priority. All new Pancheros restaurants will incorporate second-make lines to streamline the digital ordering process.
“Our brand got its start in Iowa City, and we are extremely grateful to our loyal guests who have made Pancheros what it is today,” said Rodney Anderson, president and founder of Pancheros, in the press release. “Our goal is to continue investing in this community and its people, and that’s what we are aiming to do with the rebuild of our Riverside location. We look forward to soon returning with an improved restaurant that still has the same great burritos and service our customers know and love.”
The new build at Riverside Drive will also feature a new, expanded parking lot for customers. Upon completion of the rebuild by 2025, the restaurant will host a grand reopening, as well as special promotions to celebrate the return to the location.
