Chicken Salad Chick, a national fast-casual restaurant concept specializing in chicken salad dishes, is opening its first Iowa location in Coralville.
The new restaurant will be located at 2510 Corridor Way #6b, near the Men’s Wearhouse and north of Coral Ridge Mall. It’s expected to open Oct. 16, according to a Google profile listing.
Chicken Salad Chick in Coralville will be operated by franchisees Pat and Melissa Ingle. Two more restaurants are also being planned, according to a release.
Prior to joining Chicken Salad Chick, Ms. Ingle owned and operated a Nothing Bundt Cakes franchise, while Mr. Ingle worked at Melissa’s family’s rental and party store for 15 years.
The release indicates that the Ingles “fell in love” with Chicken Salad Chick’s menu and believe Coralville is “in need of a healthier fast-casual restaurant.”
Chicken Salad Chick’s menu includes several flavors of chicken salad, available on a sandwich or atop a lettuce salad. Larger takeout containers are also available. The restaurant’s offerings also include pimento cheese spreads, broccoli and fruit salads, fresh fruit, macaroni and cheese, and a variety of soups.
Chicken Salad Chick is also opening new locations in Kansas City, Mo.; Naperville, Ill.; Lake County, Ill.; and Strongsville, Ohio.
Founded in 2008, the company has more than 270 franchise restaurants and stores in 19 states.
