Best New Restaurant: Caucho

Caucho, a new Mexican restaurant with a focus on authentic street food, takes this year’s title as Best New Restaurant in the Corridor. Located across from Cedar Rapids’ NewBo City Market, the restaurant is owned by Andy and Carrie Schumacher, the couple behind nearby Cobble Hill. Both eateries make use of local, quality ingredients, but Caucho sets itself apart with its style, according to Mr. Schumacher. “We’re taking a familiar style of restaurant, and doing something new and fresh that hasn’t been seen before,” he said. The staff focuses on fresh ingredients and authentic preparation methods, grinding all of their own corn and baking their own tortillas. In addition, Mr. Schumacher said the restaurant keeps it simple in terms of target goals. “We’re focusing on the things that matter: food, service and atmosphere.”
